Summer Basil Pizza…


Need something to go with the Sangria recipe found here???

Last summer I did really well growing Basil and Tomatoes….  This year, my tomato bush turned brown because it got some airborne disease according to my very knowledgeable friend who’s last name is the same as a local farm in my area… πŸ™‚  

 I am still not sure what happened to my Basil…  It was terrible this year.  Luckily I got some awesome basil from a friend and my local farm has the best tomatoes.  THUS, I could make one of my favorite treats… Basil Pizza…

1 (10 oz.) pkg. pizza crust  – My kids love the pillsbury crust that comes in the roll, I use that.
2 C. (8 oz.) shredded mozzarella cheese
1 oz. (1/4 C.) Parmesan cheese, grated
2 T. fresh basil leaves, snipped, OR
2 tsp. dried basil leaves
2/3 C. mayonnaise
1 garlic clove, pressed
4 plum tomatoes, thinly sliced

Preheat oven to 375ΒΊF.

Using lightly floured pizza roller, roll out pizza crust on rectangle baking stone to within 1 in of edge of stone. .

Grate Parmesan cheese. Using kitchen shears, snip basil.

In 1-quart bowl, combine the 1 cup mozzarella cheese, Parmesan cheese, dried basil and mayonnaise; mix well. Press garlic over cheese mixture. Mix well.

Place mozzarella cheese mixture over dough spread to cover evenly. slice tomatoes; arrange in single layer over  crust.  Sprinkle fresh basil.  Sprinkle crust with one cup of the mozzarella cheese.

Bake 15-20 minutes or until top is golden brown and bubbly. Cut with pizza cutter. Serve with miniature serving spatula

  3. You have some pretty smart friends! I couldn't wait for this recipe so I cheated and bought the Italian herd Philly cream cheese. It tasted better than the garlic one. Thanks for sharing@
